If the dried vegetables are kept in water they become fresh due to the process of endosmosis. Through the process of endosmosis the water present outside the vegetables enters the cells of the vegetables and thus the vegetables becomes fresh
1. The dried vegetables have less water content and high salt concentration in cells.
2. When they are kept in water they absorb water and become fresh.
3. The water enters into the vegetables by process known as osmosis.
The cell walls of the fruits and vegetables act as semi permeable membrane. When they are dried concentration inside becomes higher. On placing in water, the process of osmosis takes place. So, they swell and return to their original form. The process will be accelerated with increase of temperature because osmosis becomes faster with increase in temperature.
