Monascus purpureus is a species of yeast. It is also known as arg- Khak rice mold, corn silage mold, maize silage mold, rice kenel discolouration etc. It is red in colour and used in fermentation of foods. It is used to produce statins which is used as a cholesterol lowering agent and which helps in lowering the triglycrides and fat levels.
