Equal amount of water is kept in cup and dish, the water in the dish will evaporate faster.

Because the rate of evaporation depends on the surface area of the liquid. Larger the surface area, higher is the rate of evaporation. As dish has a larger surface area than a cup, the water in the dish will evaporate faster.
